Cervena venison stir-fry and soba noodles
- Cervena Venison
- 400 g Cervena Venison Denver leg cut into stir-fry strips
- 1 eggplant cut into 4 slices about ½ inch thick
- 250 g soba noodles
- vegetable oil
- sesame oil
- 6 shitake , snow or oyster mushrooms, sliced
- 2 spring onions sliced on the diagonal
- 2 tbsp toasted sesame seeds
- soy sauce
- 1 red chili sliced
- Greens
- spinach
- green cabbage
- bok choy
- bean shoots
- broccolini
- Marinade
- ¼ cup soy sauce
- 1 clove garlic crushed
- 1 pinch sugar
- 1 tbsp oyster sauce
- 1 tsp ginger grated
- sesame oil few drops
Method
Marinade
Mix all marinade ingredients together until smooth. Marinade the meat and eggplant for 10 minutes, then drain. Keep the marinade.
Vegetables
While grilling the eggplant on both sides in a little vegetable oil, cook the greens in a very hot wok until they soften. Add a little marinade and set aside.
Add a little vegetable oil seasoned with sesame oil to the wok and cook the sliced mushrooms with the sliced spring onions for a couple of minutes and set aside.
Cervena venison
Cook the Cervena venison very quickly in the wok with the remaining oil.
To serve
Cook the noodles as per instructions and drain. Arrange the noodles, mushrooms and greens on the dish. Place the venison on the grilled eggplant on the dish. Garnish with toasted sesame seeds.
Serve with a side dish of light soy sauce with a sliced chili.
