Spicy grilled Cervena venison
- Cervena Venison
- 500 g Cervena Venison Denver leg piece sliced into stir-fry strips
- Marinade
- 4 ½ tbsp lime juice
- 3 tbsp fish sauce
- 1 ½ tbsp ground sesame seeds
- 1 tbsp sesame oil
- 1 tbsp lemon grass thinly sliced
- ½ cup light soy sauce
- ½ tbsp ground black pepper
- ½ tsp chili powder
- ¼ cup coriander chopped
- ¼ cup shallot thinly sliced
- ¼ cup mint leaves
- ¼ tsp sugar
- Stir fry vegetables
- 2 nests of dried thin egg noodles blanched and refreshed
- mung bean shoots thinly sliced
- spring onion. thinly sliced
- mushrooms thinly sliced
- red peppers thinly sliced
- Chinese cabbage thinly sliced
- zucinni thinly sliced
- red cabbage thinly sliced
Marinade
Blend all ingredients until smooth. Marinade the venison for 20 minutes.
Cervena venison
Stir-fry the Cervena venison in batches in a hot wok or heavy pan with oil. Set aside and keep warm.
Vegetables
Ensure all vegetables are cut into thin slices. Once all vegetables are thinly sliced, cook in batches in the hot wok or heavy pan until just wilted. Add the noodles and Cervena venison and heat through.
To serve
Serve immediately sprinkling with chopped fresh coriander and toasted sesame seeds.
